1) Bluewater Grill, in Redondo Beach CA, overlooks the Redondo marina and has a variety of fresh fish that is very impressive. They have many simple, yet delicious, meals of sauted or grilled seafood including local broad-bill swordfish, Eureka sand dabs, Fijian ahi, and crispy skin barramundie. They also feature a wide ranging wine list and an oyster bar.

2) The Hungry Cat, in Hollywood CA, is dedicated to classic seafood. After dining here you may just feel the need to lick your fingers with satisfaction. A highly regarded dish they serve is the pan roasted striped bass with black trumpet mushrooms, root vegetable hash, and red wine butter; like all of their seafood meals, it is wonderfully fresh. If you have some picky eaters in your bunch they also offer some non-seafood options, such as a burger with avocado, blue cheese and bacon. Their wine list is short but they do offer over a dozen wines by the glass and their servers will give you samples if you ask.

3) Castro, in San Francisco CA, is yet another bustling restaurant with a very spacious dining area. This popular seafood place serves up plates of tuna tartar, huge tuna Nicoise salads, and clams parade with linguine. It also features a closed in patio area with a circular fire place. The main design feature is a backlit wall of bottles surrounding the buildings exposed brick.

4) Etta’s Seafood, in Seattle WA, just north of Pike Place Market, is known for its freshly caught seafood. Locals enjoy it, as well as tourists, and there is often a wait but, the food is so good it is well worth the inconvenience. Their cuisine is innovative and has Asian influences as they desire to move past traditional seafood preparation styles. Some of their signature dishes are tilapia that has been deep fried, tuna sashimi, and spiced rubbed salmon.

5) FIN, in Portland OR, has an amazing cuisine worthy of a 6 star rating. There, you can get a fine dining experience but with reasonable prices and an inviting atmosphere. The menu is broken up in to two sections: raw seafood and hot seafood, each having roughly six options. The portions are small so it is best to order two servings.

The Kauai Coffee company began in the early 1800′s as the McBryde Sugar company. This was one of the first sugar growers in Hawaii and has grown substantially over the years.

The Kauai coffee company owns a total of 22,000 acres of land on this island which makes it one of the largest landowners. In 1987, McBryde Sugar Company became the Kauai Coffee Company.

Although the company has prospered over the years, it suffered a significant loss in 1992 when Hurrican Iniki hit the island and caused significant damage to the coffee crop. However, it recovered and continued to develop. In 1996, the company harvested the highest volume of coffee from the entire Kona region.

Since coffee is a type of fruit, it develops beautiful blossoms. These later develop into coffee cherries. Each cherry usually has two seeds which is what is processed to eventually become the coffee bean.

The blossoming of these coffee plants normally begins in February. The young fruit begins to form around May and when is becomes fully ripened in September, then the harvesting begins.

The harvesting is similar to how grapes are harvested in areas like the Napa Valley. The harvesting period normally begins around mid October and runs through December.

As the cherries are harvested, they proceed to a wet processing plant where the cherries are separated depending on their state of maturity and quality. The Kauai coffee company produces five different grades of coffee from this wet processing plant.

The next step of the process is called pulping where the ripe coffee cherries get the skin and fleshy fruit portion removed. Then these pulped beans are washed with high pressure water in order to remove a sticky coating.

At that point, the drying process begins. The beans go through several stages where moisture is carefully removed to bring it to about a 12% concentration.

Following this the beans go through a milling process to further process the beans and remove unwanted materials. At that point it gets subject to a variety of inspections, sorting, and grading processes.

Once the beans have been properly sorted, they are ready to be carefully roasted. The beans are roasted right on the Kauai coffee company estate for maximum freshness and quality control. Once completed they can be shipped for you to enjoy.

According to Reuters, just a few years ago, about half of the $1 trillion American food budget went to the tills of restaurants and fast food outlets. According to BIGResearch, a consumer research firm, about 45% of Americans are eating out less this year to save money.

“What we see now, over the last year and a half, is a very, very significant change in the direction of that trend,” said Ken Powell, Chairman and CEO of General Mills. “Basically, consumers in North America are rediscovering the grocery store and cooking at home again, clearly to the benefit of some and the detriment of others as many restaurants really struggle in the U.S. right now.”

The Wall Street Journal reported that in the first half of 2008 overall newsstand sales for consumer magazines fell 6.3%. However, cooking magazines proved to be the exception to the rule. In that time period, Everyday Food’s newsstand sales rose 8.9%. Everyday with Rachael Ray gained 6.2%, and Gourmet was up 3.5%. The biggest increase was with Bon Appetit, a magazine that serves up recipes for everything from gourmet meals to fast and easy dinners. Its newsstand sales in May 2008 were up 39 percent from a year ago.

Cookbooks sales have also increased. Borders Group Inc. reported that their sales in the second quarter of 2008 were up over the first quarter. Double digit growth in book sales in the food, and cooking category were reported by Amazon.com.

An interesting, and probably unexpected, boost in cookware sales is a direct result of consumers eating out less and going to the grocery store more. After years of eating out, many Americans realize that they don’t have the necessary utensils to cook at home. Although cookware sales overall have declined recently, those with a price tag of less than $100 are doing “remarkably well,” said Florence Sheffer, a spokeswoman for the cookware distributor Meyer Corp. in Vallejo, Calif. The most popular sets are those with celebrity chef name tags.

The trend to eat at home seems destined to increase over the next few years. As families worry about the state of the economy, maybe cooking at home will have a positive impact by bringing families closer together, providing more nutritious food and helping us to save money. Who knows? Maybe the next generation will produce a plethora of amazing chefs because they learned to cook at home from an early age.
